Yesterday I made an apple pie but I used both apples and pears instead of just apples. It turned out amazing, so I figured I’d share it with you.
Pie Crust*: (I make my own pie crusts, but you can also use bought ones. It never tastes the same though! 😀 )
-1 cup (2 sticks) of cold butter, in pieces.
-2 cups of flour (I use white flour only, you can also use 1 1/3 C white flour and 2/3 C whole wheat pastry flour).
-Tiny pinch of salt.
-1/4 C cold water.
Place the flour, butter and salt in a food processor and pulse till combined (about 30 seconds). Add cold water and mix till combined (maybe a minute more?). Set the ball of dough in the fridge to cool (rolls out better if cool-you don’t have to though, I do it both ways).
*This makes two pie crusts, one for the top and one for the bottom. Just cut recipe in half to make only one crust.
-7-8 small apples (I used very small apples from our tree. If you’re using regular large apples, use about 3-4).
-3-4 ripe pears
-1 tbsp lemon juice
-1 1/2 tsp water
-7 tbsp sugar
-1 tsp cinnamon
-1/2 tsp nutmeg
-2 1/2 tbsp white flour
Slice the apples and pears, add the other ingredients. Mix together and let sit while you roll out the dough.
Preheat the oven to 350 degrees Fahrenheit.
Cut the dough ball in half and roll out one half. Set in pie pan (spray with oil if needed) and pour the apple/pear mixture into it. Place 3 dabs of butter on top of the apple mixture. Trim outside edge of pie crust.
Roll second half of dough out. Place on top of the pie. Trim the outside edge. With a fork, press down all around the edge of the pie. Cut five slits in the center of the pie in a flower shape. With the leftover crust dough, shape a rose and place it in the middle of the pie. Brush the top of the pie with egg wash (1 egg and 1 tsp water mixed together).
Place in the oven and back for an hour and a half. Take out and let cool.
This is an absolutely delicious pie! You can serve it with ice cream, or without. Also, you don’t have to use pears (though I highly recommend it) and can instead use 7-8 apples.
